(especially for ground meat dishes)

Serves 4

2 tbs butter or margarine
2 tbs wheat flour
4 dl liquid (pan juice, water from boiling veggies, or water)
1/2 cube meat- or vegetable stock
2 - 3 tbs cream (not necessarily the fattest type!)
1 - 2 tsp Chinese soy sauce or tomato paste
salt, pepper (to taste)

Brown the fat in a saucepan until light brown. Remove from heat and stir in the flour.   Dilute a little at a time, stir, and bring to a boil between each dilution.
Boil for 3 - 5 minutes. Flavor with cream, soy sauce or tomato paste, and check the seasoning with a little salt and pepper if necessary.Remember the stock cube contains a lot of salt.
